The Humble Khichdi

Khichdi is a simple Indian dish and is a source of comfort. It is a dish in South Asian cuisine made of rice and lentils (dal). It is easy to cook and soul-filling.

Ingredients for IBS-friendly Khichdi
- 1 Cup Masoor dal (lentils)
- 1/4 cup rice
- 1/4 tsp turmeric
- 1/2 tsp asafetida
- Salt to taste
- 2 table spoon ghee/oil of your choice
- 1 tsp cumin seeds
- 1 small onion fine chopped
- 1 medium tomato fine chopped (removed the seeds)
- 1tbsp ginger garlic Paste
- ** other veggies are optional
- 1/4 cup fresh coriander leaves (cilantro) finely chopped
Directions for Khichdi
- Rinse the masoor dal and rice separately under running water until the water runs clear.
- Heat some ghee in a pressure cooker.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown in color.
- Add ginger-garlic paste and sauté for another minute or so.
- Add chopped tomatoes and cook until they turn soft.
- Drain the water from the soaked dal and rice and add them to the cooker.
- Add turmeric, and salt, and mix well.
- Add 4 cups of water and combine everything together.
- Cover the lid and allow it to cook on high heat for two whistles, then reduce the heat and cook for another 10 mins.
- Once done, stir well and garnish with coriander leaves.
- Serve hot and enjoy!
