Ingredients for cajun seafood boil

  • 1 sweet potato
  • 1 ½ lb medium clams
  • 6oz medium shrimp
  • 2 kale chicken sausages
  • 12 cups water
  • 1 tbsp old bay spice
  • 2 tbsp smoked paprika
  • 2 tbsp cayenne pepper
  • 2 tbsp mustard seed
  • 2 tbsp coriander seeds
  • 1 tbsp dill seed
  • 1 tsp bay leaves
  • ½ tsp olive oil

Directions for cajun seafood boil

  1. Roughly chop sweet potato.
  2. In a cheesecloth or spice bag, add old bay, smoked paprika, cayenne pepper, mustard seed, coriander seeds, dill seed, and bay leaves.
  3. In a large pot on medium-high heat, add water, sweet potato, and spice-filled cheesecloth. Stir occasionally. Cook until tender. Approximately 10 minutes.
  4. In a small pan on medium-high heat, add olive oil and chicken sausages. Cook until the center is no longer pink. Approximately 15 minutes. Remove from heat. Slice into 1-inch-thick pieces.
  5. Once the sweet potato is tender, add clams and shrimp to the pot. Mix until fully combined. Reduce to medium heat. Cook until clam shells open. Approximately 5 minutes.
  6. Turn off heat. Allow contents to soak for 10 minutes.
  7. Serve mixture with the desired amount of spiced broth and topped with smoked paprika.
