Blueberry Oat Squares

Found old fashioned organic oats helpful for my ibs-c. This recipe is something I’ve been making. You can make and cut into squares, I have made them in small pie plates as well.

Ingredients for blueberry oat squares

Ingredients for squares bottom and top layer:

  • 1 3/4 cups old fashioned oats
  • 1 1/2 cups of flour
  • 3/4 cup brown sugar
  • 1/2 cup chopped nuts – I used pecans
  • 1/2 tsp salt

Ingredients for blueberry filling:

  • 2 cups blueberries
  • 1/2 cup sugar – can use less
  • 2 tbsp water

Directions for blueberry oat squares

For bottom and top layers:

  1. Combine oats, flour, nuts, brown sugar and salt
  2. Then add 3/4 cup of butter melted ( I used vegan margarine)
  3. Reserve 3/4 cups of this mixture

For blueberry filling:

  1. Combine ingredients for blueberry filling and bring to boil.
  2. Then add 2 tbsp corn starch with 1 tbsp water. Allow to thicken.
  3. Add 2 tsp lemon juice, stir. Remove from heat.

To assemble:

  1. Press oat mixture into bottom of 11×7 baking pan.
  2. Cook for 10 minutes at 350 degrees. Remove from oven.
  3. Spread blueberry mixture over. 1/4 inch.
  4. Sprinkle with rest of 3/4 oat flour mixture on top of blueberries.
  5. Bake for 20 minutes.

    Idonne, do you think I could use oil instead of butter? This sounds delicious.

    Hi @mellie,
    I’ve never used oil in this recipe. I’m thinking mixing oil with flour may turn out pasty? I’m not sure.
    You could try peanut butter or a almond butter.
    Ive been buying becel vegan margarine, I’m lactose intolerant and I have found that there is no taste difference for me when baking with it. I have tried lactose free butter the natrel brand and I’m not able to tolerate it.

    It’s a tasty square recipe that I now make without the oats because I can’t eat whole grains.

    Idonne, tks for your reply. I can have butter but I use a very small amount of it. The Becel vegan margarine has palm oil in it which I don’t use anymore. Now, just xtra lite olive oil. I could try applesauce, that’s a good alternative to oil in baking and still keeps it moist. I hear you re: grains. I reintroduced grains into my diet in the last two years and it’s been safe for me. Whew!

    This looks so delicious! I”m new to all this but aren’t we supposed to stay away from blueberries and gluten?

    Hi @jerbear,

    Blueberries and gluten are things some of us should stay away from, not all. You’d be surprised what one person can get away with and another will suffer from. It took me almost two years to figure out what I can and can’t eat. The trial and error is not fun, but it might give you a better idea what you can tolerate.     If anyone is intolerant to grains, I have also made this recipe without the oats. Freeze well, or stay well in the refrigerator.
